青蛙腿,中國南方地區的人稱為田雞腿。是一道以蛙類為主的菜,這是一道很常見的法國和中國菜,在世界上的其它地方像加勒比海地區、波蘭、美國的部分地區,人們也食用它。西式烹調法一般是油炸,做法非常的簡單,把整隻青蛙放入油鍋里炸,加上鹽後,就可以食用了。法國人只吃青蛙腿,其它的部分扔掉。中式烹調法則有炒、炆、煮湯等。
人們喜歡吃的並不是整隻青蛙,而是青蛙腿,它香脆可口,但是由於青蛙個頭小,摘掉青蛙腿後,其它部分又不能浪費扔掉,所以就炸整隻的青蛙。在一些寒冷的地區,炸青蛙腿一般是在冬天食用,而且青蛙都是冰凍住的。這道菜也是非洲小國加蓬的國宴。
傳說在中國上古的時期,由於青蛙是種小動物,又容易捕捉,味道又好,所以人們就喜歡吃田雞
